Foodalicious Saturday

I haven’t done an Foodalicious Friday in a while and I know I missed Friday, but I’m back with some treats—perhaps for Valentine’s Day!?

I posted my Fro-Yo recipe last week and I gotta say—it’s been a yummy, guilty pleasure a few times!

I’m pretty excited to share and try these recipes that I found yesterday.

Peanut Butter Protein Pudding
Makes 2 servings

Ingredients:

  • 2 Tbsp. natural peanut butter, creamy
  • ½ c. nonfat Greek yogurt
  • ¼ c. protein powder (they suggest vanilla, but I suppose you could do chocolate, too!)
  • 2 Stevia packets, or to taste
  • ½ Tbsp. pure vanilla extract
  • 2 Tbsp. unsweetened applesauce
  • 2 Tbsp. low calorie almond milk
  • 1 Tbsp. crushed peanuts (optional)

Directions:
Place peanut butter in a small, microwavable dish. Heat on high for 20 seconds, or until peanut butter softens. Add Greek yogurt and stir. Continue to add all remaining ingredients and whisk by hand until well combined. Top with a few crushed peanuts.
Nutrition Facts (per serving): 248 calories, 29g protein, 11g carbs, 10g fat

 

Pomegranate Pistachio Dark Chocolate Bark
Makes about 16 servings

Ingredients:

  • 10 oz. of quality dark chocolate (at least 60% cacao), chopped if in bar form
  • 1/3 c. pomegranate arils
  • 1/3 c. salted or unsalted pistachios, chopped

Directions:
1. Melt chocolate over a double boiler by placing a large bowl over a small sauce pan filled with 1 inch of water. The bowl should not be touching the water. Bring the water to between a low boil and simmer and then place the chocolate in the bowl. Let set until it begins to melt and then stir every couple minutes until it’s fully melted.
2. Immediately pour the chocolate onto a rimmed baking sheet and top with pomegranate arils and pistachios, making sure you sprinkle them on as evenly as possible.
3. Transfer the bark to the freezer to chill for 5-10 minutes. Then remove, break into 16 roughly pieces and store in an airtight container in the fridge until serving.
